I always like to mix spple and cheese. At first it was just slices of fresh apple and small hard cheese cuts. Taste it, it is really savoury especially if you play with several kinds of cheese.
My next meeting with couple apple+cheese took place in CoffeeBean, a nice cafe in a center of Moscow. There was a great dessert there some years ago, apple cobbler with Cheddar cheese.
Let me introduce a third idea for apple and cheese lovers. Just one proviso: you should like goat cheese. However if it isn’t, the galette will reconcile you with the taste of the cheese.
- 110 g butter
- 210 g flour
- 30 ml cold water
- 3 apples (450 g)
- 100 g goat cheese
- 40 g brown sugar
- 1 yolk
- handful of pecans
- a table spoon of honey
- Preheat the oven to 200 °C.
- Chop the butter into cubes, add the flour and turn the mixture into crumbs. After adding water, knead the heterogeneous dough. Roll out the dough 2 mm thick, put the apples, sliced into slices. Put pieces of cheese and nuts on top.
- Wrap the edges of the dough then grease the edges with yolk.
- Bake for 30 minutes.
- Add honey when serving. Enjoy!
