You’ll agree, preparing a complex dish while spending a lot of time in the kitchen isn’t what we all dream of on a fine summer day. That’s why the recipe for these Juhannus waffles is great for mid-summer season. They mix up very quickly and bake even faster (not to mention how quickly they are eaten).
Why Juhannus? Juhannus is the Finnish word for Midsummer, a major national holiday celebrating the summer solstice, often called Saint John’s Day, filled with traditions like lighting bonfires (kokko) by lakes, enjoying saunas, grilling, dancing, and spending time at summer cottages (mökki) with family and friends during the longest days of the year.
But even on Midsummer, breakfast is needed. So let’s go make some waffles.

Juhannus Waffles
great receipe for mid-summer season
Ingredients
3 eggs
200 g all purpose flour
600 g buttermilk
50 g olive oil
0.5 teaspoon salt
Method
- Mix well eggs and buttermilk in a large bowl.
- Add salt, then flour and oil. Mix well until smooth and incorporated.
- Preheat your waffle iron according to the instructions.
- Bake waffles in a waffle iron until golden brown. In my device, the baking time is 6-7 minutes, but you should orient yourself according to your waffle iron: check the condition of the waffles starting from the 4th minute, carefully lifting the lid of the device.

How to Serve
There is no sugar in this receipe so you can serve Juhannus waffles with sweet or savory filling. You can offer salmon glavlax and cream cheese, maple syrup or ice cream with them. Buttermilk is an indispensable ingredient.
