Almost dessert but could be a breakfast too. Refreshing. Vegan.
Not too sweet, soft and fluffy, a lot of berries (I personally prefer lingonberry for its bitterness).

Whipped Semolina Porridge with Berries or Vispipuuro in Finnish is a northern “pink cloud” dessert porridge made from semolina and sour berries, primarily lingonberries.

It’s essentially semolina porridge in a berry broth with sugar.

After cooking, it’s cooled completely and whisked for a long time with a whisk or mixer – hence the name: vispipuuro, from the Finnish vispilä, meaning “whisk.”

Whisking makes the porridge very light and airy, almost like a mousse. It’s eaten cold, usually with cold milk.

This dish originates in Finland, but is also found in neighboring countries: Norway, Sweden, Estonia, and Latvia – under the names russedessert, klappgröt / vispgröt, mannavaht, and debesmanna.

The recipe’s appearance in printed Finnish cookbooks dates back to the 18th to the early 20th century, but researchers believe the idea of ​​whipped berry semolina was common in peasant cuisine even earlier – as a way to spice up cheap grain porridge with seasonal wild berries.

In Scandinavia, it was an everyday dessert or afternoon snack for children: filling, inexpensive, and a source of vitamins during the long winter. Today, many Finns remember vispipuuro as “kindergarten/school food” and “grandma’s porridge.”

Ingredients

1l water
130 g semolina
140 g sugar
a pinch of salt
200 g frozen lingonberry or berry mix

Method

  1. Boil water with sugar and salt in a pan.

2. Add semolina and berries, cook over medium heat for 10 minutes, stirring constantly.

3. Cool completely and just after that whip well with a hand mixer or a stick blender. Serve with fresh berries and milk. Store in the refrigerator.

Whipped semolina porridge is typically served in a bowl, topped with sugar, oats, nuts, and sometimes a little cream or yogurt.
