Cook quark. It would be better to make the quark the day before.
Rub sugar with butter until smooth, add quark, bring the mixture back to uniformity. The easiest way to do this is to use a blender.
Add flour, knead a homogeneous dough.
Roll the dough into a ball, wrap in plastic wrap and refrigerate for an hour (you can leave it overnight).
Preheat oven into 180 °C.
Line a baking sheet with baking paper.
Roll out the dough 2 mm thick with a rolling pin between two sheets of parchment paper. Or without its like me.
Cut out circles with a cutter, sprinkle with sugar, fold in half, sprinkle with sugar again and fold in half. You should end up with quarters of a circle. Sprinkle the finished cookies with sugar.ORCut out circles or square with a cutter (I use a cutter for linzer cookies), sprinkle with sugar, then fold the cookie in half and sprinkle with sugar one more time. In this case you get once-folded cookie.
Put cookies on a baking sheet.
Bake for 18 minutes until browned (for cookies with 4 leayers), but check after 15 minutes (usually this time is enough for 2-layers cookies).
