This recipe for my Cookie Calendar was used in the family of my parents by name “Kisses” who knows why. Probably it means that the cookies are very tender and soft. Anyway I like this name, it fits to these cookies pretty well so let’s stay it here.

When I was younger for some reason it took me the whole evening to roll and cut the cookies. Now it takes me only 15 minutes, provided that the home made quark was prepared the day before. So remember this tip if you would like to optimise your process.

You can use a large glass with a diameter of 6-7 cm as a cutter. In my opinion this made the cookies rather large and inconvenient for serving and eating. I reduced the size of the cookies, which did them good.

‘Kisses’ Quark Cookies

Ingredients

Dough

250 g home made quark
100 g softened butter of room temperature
30 g sugar
170 g all purpose flour
1/2 tsp baking powder

Fillling

50 g sugar for sprinkling

Method

1. First of all cook quark by this recipe in my collection. Quark according to this method will turn out soft and tender, without excess sourness. As I mentioned above, it would be better to make the quark the day before.

2. Rub sugar with butter until smooth, add quark, bring the mixture back to uniformity. The easiest way to do this is to use a blender.

3. Add flour, knead a homogeneous dough.

4. Roll the dough into a ball, wrap in plastic wrap and refrigerate for an hour (you can leave it overnight).

5. Preheat oven into 180 °C.

6. Line a baking sheet with baking paper.

7. Roll out the dough 2 mm thick with a rolling pin between two sheets of parchment paper. Or without its like me.

8. Cut out circles with a cutter, sprinkle with sugar, fold in half, sprinkle with sugar again and fold in half. You should end up with quarters of a circle. Sprinkle the finished cookies with sugar.

OR

Cut out circles or square with a cutter (I use a cutter for linzer cookies), sprinkle with sugar, then fold the cookie in half and sprinkle with sugar one more time. In this case you get once-folded cookie.

9. Put cookies on a baking sheet.

10 Bake for 18 minutes until browned (for cookies with 4 leayers), but check after 15 minutes (usually this time is enough for 2-layers cookies).

‘Kisses’ Quark Cookies
