This is my favourite cookies from my childhood. It is a goor reason to include them in my Cookie Calendar, isn’t it? Hope you will like them too.

When preparing, there are two options: place small cookies with a diameter of about 3 cm. They will spread a little and you will get 5 cm cookies, quite dry.

Or you can do it differently: place large cookies, almost cakes, with a diameter of about 10 cm. In this case, in the oven they will not so much spread as rise. The center will remain slightly moist – many people like this.


Almond Cookies

Ingredients

120 g almond flour
230 g sugar
100 g egg whites (from 3 eggs)
30 g all purpose flour

Method

1. Preheat ovn into 180 °C.
2. Mix almond flour, sugar and 75 g egg whites well in a blender.
3. Add the remaining whites and mix the mixture thoroughly again.
4. Heat the mixture to 35 °С.
5. At last add flour and mix well.
6. Line a baking tray with baking paper, grease with oil and sprinkle with a little flour.
7. Place cookies on paper at a distance of 4-5 cm.
8. Bake for 15-17 minutes.

Store the cookies in a tin or place them in The Cookie Calendar gift box.
