No-Bake Quark (Tvorog) Cookie House Cake with Chocolate Ganache


This Quark (Tvorog) Cookie House Cake is dedicated to my childhood memories, when my friends and I would make this dessert using ready-made cookies and cottage cheese. What could be simpler? All the ingredients are ready-made and store-bought; this dessert requires no baking. Perfect for girls aged 12-15!

As the girls grew older, store-bought ingredients no longer seemed like the height of perfection.

It turned out exactly the same as with cheesecakes: using store-bought cookies started to feel both tasteless and vaguely suspicious — staring at the ingredient list and trying to guess what half of it even means.

So now, whenever a recipe calls for shortbread, I don’t go to the shop. I go for the mixer and make the cookies myself. It definitely makes the process longer, but the result matters more than speed.

The same is broadly true for quark or tvorog, too — though here I won’t pretend otherwise: I live in a country where tvorog (in the way we mean it) simply isn’t made, so I have to make it from scratch.

Yes, it’s a bit more hassle. But it’s tastier — and safer.


No-Bake Quark Cookie House Cake

Ingredients

Ingredients for Quark Cookie House

You will need enough shortbread cookies so that when laid in a row they will make up the following area:
“roof” of Quark (Tvorog) Cookie House – 20 cm x 13.5 cm x 2 sides,
“floor” – 20 cm x 4.5cm.

You don’t need to follow the exact numbers: it will be enough if the area of ​​the cookies placed next to each other matches the indicated one. And it would be better if you use some narrow cookies in this recipe: this will make the dessert easier to eat.

If you are baking the cookies yourself, follow this recipe, halving the amount of ingredients.

Ingredients for Filling

600 g quark (tvorog)
150 g sugar
150 g butter of room temperature
1 tsp vanilla extract

Ingredients for Decoration

100 g white chocolate
berries

Method

Making Cookies

If you are using store-bought quark and cookies, skip stage of making cookies and start with making filling.

  1. Make quark, using this recipe or use store-bought quark with 5-18% fat content.

2. Bake shortbread cookies. Size of each cookie in my case: 13.5×3.5 cm for “roof” and 4.5×3.5 cm for “floor”.

To ensure a smooth, even bottom, use a perforated silicone baking mat like this: Silikomart Air Mat. Due to its fine-mesh structure, during baking the cookies are blown with hot air not only from above, but also from below, creating an even, smooth surface.

To create the imitation roof tiles, I use a silicone insert for a bouché mold, which is actually designed for making mousse cakes. But I came up with this undocumented use for it: I place it on top of the rolled-out dough and gently roll it with a rolling pin.

You can use a similar mold or any rolling pin with a pattern. Or simply make shallow cuts in the dough with a knife to imitate tiles.

Making Quark (Tvorog) Filling

  1. In a blender, turn the quark into a smooth paste.

2. In other bowl whisk well butter and sugar until white. Add vanilla extract and beat until incorporated.

3. At last add quark paste to the butter mixture and beat with mixer until filling becomes smooth and creamy.

4. Place the mixture in the refrigerator for an hour: this will make it easier to work with.

Assembling

  1. Place the cookies on the baking paper, close to each other in three rows: a “roof” row, a narrow “floor” row, and a “roof” row again, with the wrong side (if your cookies have one) facing up.

2. Carefully holding the cookies so that they do not shift, spread the entire cookie layer with the quark filling.

3. Using both hands, grab the edges of the paper along both rows of roof cookies and lift both edges up, gluing the roof sides together.

4. Place the entire house in the refrigerator overnight.

5. Turn the house over onto a serving plate and remove the paper and film.

6. Melt the white chocolate in short bursts in the microwave and decorate the top of Quark Cookie House Cake with it. Add berries and serve. Store in the refrigerator.
