Now I can’t even remember where I got this recipe for Apple Galette with Goat Cheeses, I think I’ve always made it.
For as long as I can remember, I have been a fan of the apple-cheese combination. At first it was just slices of fresh apple and small hard cheese cuts. Try this if you haven’t tried it yet, it is really savoury especially if you play with several kinds of cheese (and also apples).

My favorite Moscow coffee shop, CoffeeBean, was loved not least because of the cobbler, which was a menu item for many years. It was the great apple pie with Cheddar cheese. For several years in a row, I ordered practically the same thing at this coffee shop: fruit pie and a large cappuccino with cinnamon.

Let me introduce one more idea for apple and cheese combination lovers. Just one proviso: you should like goat cheese and its specific smell and texture. However if it isn’t, the galette will reconcile you with the taste of the cheese.

Apple Galette With Goat Cheese

Ingredients
Ingredients for Dough
110 g butter
210 g flour
30 ml cold water
Ingredients for Filling
450 g sweet apples ~3 apples
100 g goat cheese
40 g brown sugar
1 yolk
handful of pecans
1 tbsp honey for serving
Method
- Preheat the oven to 200 °C.
- Chop the butter into small cubes.
- Add flour to butter and turn the mixture into crumbs. The easiest way to do this is with a blender. You can also cut the butter and flour mixture with a knife.
- Add water to the butter mixture and knead the heterogeneous dough. If you’re mixing the dough in a blender, wait until the dough forms a ball after adding water then finish mixing. If you kneaded the dough with a knife, start kneading it with your hands after adding the water. Don’t knead it for too long.
- Roll out the dough to a thickness of 2 mm on a sheet of baking paper.
- Remove the cores from the apples and cut into thin slices. Do not peel them.
- Select 6-8 nuts, the most beautiful ones, and chop the rest finely.
- Place the sliced apples on top of the dough leaving 3 cm from the edge.
- Then place cheese slices on top of the apples. Sprinkle with pecans.
- Using the edges of the paper on which the dough with the filling is laid out, fold the edges of the dough towards the middle, forming a galette.
- Lightly beat the yolk with a little water. Brush the edges with the yolk then sprinkle them with brown sugar.
- Bake for 30 minutes or until the edges of the galette will brown nicely.
- Add honey when serving. Enjoy!
Variations
Let’s talk about ingredient substitutions in this galette.
Can pecans be substituted with another nut? Yes. But even after trying different variations, you’ll always end up with the original – pecans. Not as annoying as walnut, not as original as pistachio.
You can also replace the goat cheese with sheep’s cheese – this version of the dish will be a little more tender, and perhaps you will like it better.
At last as for the apples, I especially like to use sweet varieties in this recipe. In my opinion it creates an interesting contrast with the savory cheese and adds depth to the overall flavor of the galette.
