Lazy Quark Dumpling is one of my favourite type of breakfast especially in winter. This warm dish is high in protein and calcium, with minimal flour and eggs at the same time. It can be served with either sweet jam or unsweetened sour cream.

The key ingredient of this dish is quark.

When I first moved to Finland, I tried to find good-quality quark. However, I quickly discovered that local stores didn’t sell it. And what specialty stores offered wasn’t tasty enough and/or of sufficient quality.

From that moment on, I began fermenting milk in my own kitchen, experimenting with ingredients and fermentation times, and weighing the cheesecloth-lined bags in a colander. All of this became the basis for many quark dishes. Quark rings, quark pancakes with prunes, quark casserole, lazy dumplings. I might continue endless.

Quark is a fairly dense, pressed fermented milk product that can be separated into pieces with a spoon. It has different names in different countries e.g., cottage curdtvorog and sometimes – cottage cheese. In my blog, I stick to the word quark, although in Finland the word refers to a soft fermented dairy product that is similar in taste and consistency to yogurt. In Russian I prefer the word tvorog (stress on the second syllable) in part to avoid confusion with that local product.

Lazy Quark Dumpling

Ingredients

250 g quark (I prefer 5%)
1 egg
2 heaped tbsp all purpose flour

Method

  1. Make quark using this recipe.
  2. Mix quark and egg thoroughly, add flour and knead to a homogeneous dough. At this stage I always use a blender.
  3. Close the blender jar and place it in the refrigerator overnight. This step is very important, as it allows you to minimize the amount of flour in the dough. Besides, it’s very convenient: you can do almost all the work the day before breakfast.
  4. Bring water to a boil in a large saucepan.
  5. On a table covered with flour, roll the dough into a rope with a diameter of 2-3 cm.
  6. Cut the rope diagonally into 1.5 cm wide pieces.

  1. Put the pieces into boiled water until they pop up. Usually it takes 1-2 minutes.
  2. Fish out the Lazy Quark Dumpling pieces with a slotted spoon.
  3. Serve with sour cream, jam or berries.
